poke masters

The three division winners from the Fresh Catch Poke Contest moved on to the finals on Sunday.  The winners today would get two roundtrip tickets anywhere Alaska Airlines flies.

These were Sunday's competitors:  Ryan and Jason, Frankie and Adrienne, and Amber.  They are all students in the culinary school and classmates.

Didn't really have much to do with the contest but he looked cute.















On Saturday, everyone came with their own recipes and ingredients.  For the final competition, each team got a "mystery box," like on the TV cooking shows (and Ryan's interview).

I don't remember all the items but the main thing was salmon.    There was papaya, kukui nuts, cilantro, peppers, tomato, tempura sauce, hot sauce, and various Aloha Shoyu sauces (since they were a sponsor).










They had 45 minutes to come up with a poke using all the ingredients in the box.  Jason and Ryan came up with a plan pretty quickly and got going.































"Plating" the samples for the People's Choice judges.  Judging was the same as the day before, with 50% weight from the expo attendees and 50% from the designated judges.













Here's the final entry:  salmon two ways - one cooked and one made into a pate.













Amazing job to put all this together in such a short time with "mystery" ingredients.
