garde manger



Ryan is now taking garde manger class for the first half of the spring semester.  He sent me the first picture saying that they had to learn how to cut fruit from a video because the garde chef instructor didn't know how.  Pretty good for his first day.






He came over to meet us for dinner on Wednesday and after dinner we went to the market to buy tomatoes and an apple so he could show us what he learned.

Then he peeled the skin off a tomato to make a rose.  Pretty cool.

He said the thing about garde manger is that it takes patience, something he doesn't have much of.  He like to rush through and get things done and finish first.  Hopefully this class will teach him the benefits of patience.

Super scary to me, I cringe every time he is chopping something or checking the edge of the knives for sharpness.

I cut myself once with a steak knife (using it to chop something) and I almost passed out.  Glad that he seems to be enjoying himself so far.
